The Ruiz family business had always been coffee. Their focus is on building and maintaining close relationships with smallholder producers. This coffee is produced by a farmer that is developing his land in different lots. For the time being he enjoys experimenting and trying out new techniques to process his varieties. His neighbours are world famous producers but due to conflicts with them, the producer has decided to remain anonymous, and the information regarding his production and processes is strictly classified information for the time being. The paché variety comes from Guatemala and it is a mutation from the Typica trees, it is smaller than the typica and in the Panamanian highlands enviroment is producing very well.

Coffee came to Panama with European settlers in the early 19th century. For a long time, the coffee from Panama didn’t have a particularly good reputation, the production was only 10% of the neighboring country Costa Rica. Panama is now very popular among specialty traders and consumers.
