The El Olmo farm is located close to the city Teocelo.
The cooler temperatures from the altitude around Teocelo and shade means the beans mature more slowly, and causes the beans to be denser. Beans with higher density develop deeper flavour and aromas. The farm is managed by a company called DM Sustainable Coffee. The team
combines 3rd generation Mexican coffee producers (Mr.
Martin Moreno & Marcos Aguilar) and COFOCO (a leading sustainable food & restaurant chain from Denmark). The farm operation focuses on quality and sustainability with respect to sourcing and processing. DM Sustainable
implements unique sustainable approaches: solar panels,
organic compost, tree planting, shade grown coffee, Teocelo member of ICLEI and African drying raised beds.

Although the best known Mexican coffee comes from the three regions: Chiapas, Veracruz and Oaxaca, there are five states on which 94% of the coffee production is spread out over 700 thousand hectares; this includes the states of Puebla and Guerrero. Over 49 different climatic regions provide a great variety of growing conditions for coffee plants. From humid to dry and from cold to warm, the variation in landscapes, climates and soils differentiate aromas and flavors in the cup. Mexican coffee grows under shade trees that cover around 50% of the plants. Is hand-picked and mainly sun dried.
