This natural processed coffee is produced in the Yirgacheffe region on an aprox. altitude of 1900-2200 m.a.s.l. First, 85% well riped and 15% reddish unripe cherries were selected. The cherries are dried then on raised beds. On each bed, round about 200kg of cherries with thickness as thin as possible are spread out. The raised beds were then placed in a location with more wind blow and less sunlight. The drying goes slowly for 21 days.
