This coffee is processed at Palmichal Mill. After pulping the cherries, 100% of the mucilage is mechanically removed using efficient machinery to minimize water usage.
Subsequently, the beans go through a centriflux, the beans then enter the rotational dryer (known as Guardiola in Costa Rica) for 38 hours.
The drying curve during this stage is controlled by software to ensure a slow and uniform dry.
After resting in parchment for two months, the coffee is dry-milled and sorted by weight, density, size, and color.
Palmichal Mill adheres to strict environmental and social standards, the small amount of water used during the process is 100% treated.

National output was greatly increased by the completion of a main road to Puntarenas in 1846, allowing farmers to more readily bring their coffee from their farms to market in oxcarts – which remained the way most small farmers transported their coffee until the 1920s.
