this natural anaerobic processed coffee is produced by our long-term partner CAfe granja La esperanza, at finca potosi, a farm located at an altitude of aprox. 1.400 – 1.860 meters above sea level. this Coffee is left for more than 166 hours in a special tank (temperature aprox. of 30°degrees), without any oxygen. removed by an air extractor, to create an oxygen-free atmosphere, the anaerobic fermentation process starts. afterwards the cherries are dried with an mecanical dryer (for aprox. 48 hours) to dehydrate. then the cherries are passed to solar drying patios for about 9 days to reach the final moisture level between 12-12.5%. the result of this process is a sweet and balanced cup profile, with outstanding juicy notes.
