Rigoberto Herrera Correa is the owner of Finca Las Margaritas since 2000. The farm has
had coffee crops since its inception (about seventies), but special coffee crops since 2007.
The Finca is located in the town of Caicedonia. There, Rigoberto Herrera Correa has planted
32 hectares with 8 varieties. For the care of the crops, Finca Margarita employs around 30
people, in total he employs between 25 and 90 workers depending on the harvest season.
Roughly 70% of the staff is home to the area or and surrounding regions.
Sudan Rume is a wild tree located in the forests of the intertropical zone of Africa, southeast
of the Republic of Sudan, and was discovered in 1942 in Boma Plateau. One of the few places
in the world where arabica coffee grows in wild conditions. Before bringing this variety to
the farm, multiple soil studies were made finding the best results in Las Margaritas farm.
Sudan Rume in order to be considered a natural, needs to have a very and prolonged
fermentation process controled. The time that it takes to get the most exciting flavors, out
of this complex fermentation process varies from 20 to 34 hours.
