This coffee is from Cafe Granja la Esperanza’s own farm “Finca las Margaritas”. Rigoberto Herrera (owner of the farm) is the third generation of a coffee growers family which started the business back in 1940. On 10 hectares they planted the variety
Pacamara at an altitude ranging from 1450m to 1800m above sea-level. The Pacamara is a hybrid between the Pacas variety from El Salvador and Maragogype variety from Brazil. The manually picked coffee cherries are fermented in cherry between 50 and 60 hours. After fermentation, the coffee is left in the silo for 48 and up to 72 hours with rest intervals. This controlled fermentation brings about an exceptional cup profile.
