this geisha hybrid is also prouduced by CAfe granja
La esperanza at the Cerro Azul Farm at an altitude of
aprox. 1700 – 2000 meters above sea level. the Coffee
is stirred and sensorial tasted to determine the ideal
fermentation based on the cup profile wanted. the
Fermentation time for this coffee ranges between 19
and 22 hours in whole cherries and then the cherrie
skin is taken off to start the second fermentation
step in parchment and mucilage for at least 35 hours.
Once the coffee has been depulped, it is dried using a
mix of patio and silo. the Coffee is constantly and slowly
spreaded in different drying layers to propitiate
the formation of aromatic precursors.
