Finca La Luisa Lychee honey

For this process a pressurized stainless steel tank is used. Coffee cherries are fille dinto the tank and CO² is flushed to create an environment with no presence of oxygen. Cherries are fermented for 5 days. Coffee juice is extracted froom this first process. Fermented cherries the get de-pulped and returned to the fermentation with the extracetd juice mixed with the selected fruit. This second process takes another 3 days. Finally coffee cherries are ready to dry for another 5 days.
