The Aruzi variety was first identified in Inzá, Cauca, when a coffee tree with noticeably different characteristics stood out among the surrounding plants. Genetic analysis later confirmed a close relationship to Ethiopian Heirloom varieties, known for their aromatic complexity and lively cup profiles. As the variety showed both resilience and strong yields, it was gradually adopted by local producers, adding a distinctive expression to the region’s coffees.
At Buena Vista, Javier Quintero and his team harvest only fully ripe cherries before hand-sorting and floating them for quality selection. The coffee then undergoes a controlled 30-hour underwater fermentation following Cofinet’s protocol. This approach develops sweetness and clarity while preserving the coffee’s naturally bright and balanced character. After fermentation, the coffee is washed and dried slowly on raised beds to achieve a stable and clean cup.
The result is a balanced and clear cup reminiscent of lemon curd with a creamy body.
